I’m pretty sure this just happens with coconut milk when it gets below a certain temperature.

Yeah, this is fine. I use canned stuff when I cook. The coconut milk is 2/3s coconut log that you have to scoop out first. It’ll cook into a liquid anyway.

You have to shake it up to make it one consistency but this is totally normally.

So this is the fat content vs the water. In a can, you can shake before opening so it’s all same consistency. If you don’t shake it, you can get a clear coconut water and a thick cream on the top. Your one is somewhere between these two options. If it was off, it may discolour or have a rotten smell.

I only ask because 3/4 meals I ordered had to be discarded this week so I’m just extra skeptical about this meal. I don’t use coconut milk, so safer to ask before using.
