Grilled Salmon with Avocado, and Cucumber Salad
Ingredients:
– 4 oz grilled salmon
– 2 cups mixed greens
– 1/4 avocado, sliced or cubed
– 1/4 cucumber, sliced or cubed
– 1 tbsp olive oil
– Salt, pepper, garlic powder, paprika to taste
Dressing
– 1 tbsp olive oil
– 1 tbsp lemon juice or balsamic vinegar
– 1/8 tsp Salt
– 1/8 tsp garlic powder
– 1/8 tsp pepper
– 1/8 tsp Italian seasoning
Recipe:
1. Cover salmon in olive oil and season with salt, pepper, garlic powder, and paprika to taste.
2. Grill salmon until fully cooked.
3. Combine olive oil, lemon juice, salt, garlic powder, pepper and Italian seasoning to make dressing. Blend or mix well.
4. Toss mixed greens, avocado, and cucumber with dressing.
5. Serve salmon on top of the salad.
