Recipe:
For the sweet potatoes:
Usually I roast them and mash, but I didn’t have time so this time I peeled, cut into chunks, and boiled until tender in salted water. Then I mashed them with 2 tbs of butter, cinnamon, ginger, 2 tbs of brown sugar, orange zest, white pepper and salt to taste.
For the stew:
1 medium yellow onion chopped
1 pound of cremini mushrooms quartered
4 cloves of garlic minced
1 pound of turkey sausage
2 tbs butter
3 tbs flour
About 4 cups of homemade stock (chicken is fine, I used beef this time around, but I also didn’t measure, I eyeballed it)
4 cups cooked cannellini beans
Sage
Black pepper
1 tbs cider vinegar
1 large bunch collards stems removed and chopped
salt to taste
Heat the butter in a large Dutch oven until foamy. Brown the turkey sausage and remove and set aside. Add the onion and cook until soft and starting to turn golden. At the mushrooms and stir, cook on medium heat stirring until the mushrooms start to release their water and it cooks off. Sprinkle the flour over all of this is and give it a good stir, cook another 5 minutes. Slowly add the stock. Bring to a simmer and add the collards. Add the sage, pepper, vinegar, cover and cook at a simmer on low for about 30 minutes until the greens start to get tender. Add the sausage and the beans, stir well, and cook uncovered for another 20 minutes or so. When it’s done it will be a little slightly thickened, the greens will be tender but the beans should not be falling apart.
When you serve, this is really good with a little Louisiana style hot sauce added into your bowl. Enjoy!
