I posted here last week and this is what I made for the next few days. I am trying to cut my carbs intake especially rice, which I eat daily.

Chicken breast- this is the marinated chicken breast (2 pcs) cut into strips that I did last week and freezed. Air fried at 400f for 15 mins or so.

Beef with veges- I had some leftovers from the marinated beef (shabu-shabu cut) I cooked last week ,so I just add veges to it.

Roasted Brussel sprouts- seasoned with garlic powder, onion powder, ground pepper, salt. I added half of medium size onion and half of a bell pepper for color. Baked it at 400F, 20-25 mins.

Pizza bowl- I used 2cups of the browned beef I freezed last week, mixed with garlic ,onion. Seasoned with garlic powder, salt,ground pepper, italian seasoning.Layered in a baking dish – meat mixture, shredded cheese(Cheddar & mozzarella), marinara sauce, salami then lastly shredded cheese. Baked in 350F for 20-25 mins.

Quinoa- I just cooked this plain without seasoning. 2 cups Quinoa with 3.5 cups water. I rinsed it twice. I was using an InstaPot and used the rice feature. I used the glass lid, stir occasionally to prevent burning of the quinoa.This is my substitute for the rice.

P.S. I used some of the ingredients I prepped from last week, so this cooking session didn't take long. Again, I mix and match some of the meals.
