Makes 1 serving of 367 Kcal
Ingredients
50 g cooked chickpeas (I pressure cooked the chickpeas with salt and 3 garlic cloves)
1 tbsp chopped onion
1 tsp chopped chilli
2 tbsp chopped pineapple
1 tbsp spicy mayo (I used Wingreens Farms Spicy chipotle mayo which is vegan)
2 tbsp thick curd/Greek yoghurt
Salt and sugar/honey to taste
To serve
2 slices wholewheat bread
20 g low cal popped/baked chips of choice (I used 4700BC Hawaiian Barbecue Corn chips)
Method
1. Mash the chickpeas completely.
2. Add in the remaining ingredients and mix well.
3. Spread over the slices of bread, crush some chips on top and serve it up! You can have the leftover salad mixture as a dip with the remaining chips.
Use this for sandwiches, dips, wraps or even mix with some cold pasta for an easy pasta salad. ❤️
