Ingredient:

1 pound spicy Italian sausage or ground sausage
4 tablespoons butter
½ large onion
3 cloves garlic
4 cups chicken broth
2 cups water
7-10 medium yellow potatoes
1 tablespoon olive oil
1/2 tablespoon salt – or to taste
1 teaspoon black pepper
2 cups heavy cream
4 cups chopped kale
bacon and/or grated parmesan cheese for topping – optional

Instructions:

In a large pan add olive oil and saute sausage 4-5 minutes until browned and set aside.

In a large pot, add butter and saute onions over medium heat until translucent. Add garlic and saute for another minute until fragrant.

Add chicken broth, water, potatoes, salt, and pepper and bring to a boil. Boil until potatoes are tender. Stir in heavy cream and sausage and boil for 5 minutes. Add chopped kale and boil for one minute. Serve garnished with grated parmesan cheese and/or bacon if desired.
