I just got these oven proof prep bowls for single servings of this frittata bowl
FOR 3 SERVINGS
6 eggs
2/3C cottage cheese
1/4C milk
Whatever veggies (1.5C?)
Whatever cheese (optional – not include in macro count below)
1tsp olive oil
Spray bowls with oil
Saute up diced veggies (if needed) and add to the bowls. Add cheese if using
Blend cottage cheese with milk then whisk into the eggs. Add egg mixture to bowls
Bake at 350 for 25-30min
I usually top with avocado and/or salsa

I make something similar that I call a crustless quiche, so I make it in a deep dish pie plate…but I may try baking in individual bowls! The main difference is that I use ricotta instead of cottage cheese.
