Can’t forget these quite unique noodles of Misoya in Nagano. The best way to describe is hmm…think of a very dark whole wheat bread. Very wheaty, almost bread like. I liked it, but I think it needs a bit more of a heavy and rich soup to stand against.
The miso soup itself is more on the lighter side, really shines once you add some of the spicy paste that is available on the counter. Or you just go directly for the spicy miso.
