
For the crepes:
Ingredients:
-2 eggs
-50g cream cheese
-50g almond powder
-Sweetener of your choice (depending on your taste, I use the equivalent of 2 tablespoons of sugar)
-Keto vanilla extract
-Pinch of salt
-50ml olive oil (or butter)
You can add almond milk or coconut milk if you like the taste of plant milks!
Mix it all together!
Then pour a thin layer of the mixture into a hot pan.
For the cream
We've come to make a mascarpone chantilly!
-150g mascarpone
-60g heavy cream
-Sweetener of your choice
-Keto Vanilla extract
-Pinch of salt
-2 tablespoons keto blueberry jam (you can buy it or make it on your own)
Whip the cream with a mixer
and voilà!
