The brioche :
-125g plain yoghurt (or vanilla flavoured without sugar)
-80g almond powder
-1 teaspoon baking powder
-Sweetener of your choice, to your liking
-Keto vanilla extract
Mix all ingredients together

20 minutes at 180 degrees

Once the brioche is baked, prepare a mixture of one egg, sweetener, vanilla extract, sugar-free vanilla-flavored soy milk and dip your brioche pieces in it. Melt salted butter with a little granulated sweetener and bake your toast. Toppings of your choice (i chose a mascarpone chantilly in which i added pistachio flavor, keto maple syrup, red berries and some pistachios)

And voilà!
