
Pounded out some loin (hehe). Seasoned em with s&p, onion powder, and smoked paprika. Made the sandwich with the darker, fattier, juicier parts that I trimmed off before cooking all of it. Toasting the inside of any bread type is good, but frying just the inside layer like a grilled cheese is great.
