This is a real knife that is used by the fish cutter at my current job. He’s been using it for 35 years.

  1. It should be noted that he doesn’t know how to properly sharpen a knife, and doesn’t care to. He only uses a pull through.

    I broke the tip off of a knife like that in a joint and ended up opening the first 3 knuckles on my left hand.

    I can respect it. If the results are good, more power yo. There’s something to be said for “ain’t broke don’t fix it”.

    That said, if the fish is fucked up then it’s knife shopping time.

    I think it’s pretty fucking bold and outright risky of you to take a picture of it.

  11. A quick note because someone thought this might be mockery:

    I’m not poking fun at all. I love it. I posted it because I think it’s interesting.

    I know that he likes the knife. I know that it has sentimental value to him.

    I really thought of it more as pointing out that this job is more fluid than people in the industry sometimes understand, especially those more new to it.

    When I said I prefer different tools, that was a reflection of myself and not him.

    I get what you’re saying, but I absolutely wasn’t trying to talk shit or even judge. I thought other people might find what stalwarts of the industry use interesting.
