Good morning and happy Marine Corps birthday to all who celebrate.

I started smoking two brisket flats 5lbs and 4lbs) around 1 AM, expecting they’d be done late this morning so I could stick them in an oven/cooler before dinner.

At 8am, the Traeger probe is showing 192°, but another digital thermometer near the same spot is showing 175°.
(The smoker temp has been holding well; the
difference in the photo is because I just opened the lid.)

I don’t want to kill the meat OR my guests today. I’m a little unsure of what to do here.

    Edit to add: I just moved to Traeger probe to a different part of the same flat and it’s down 10°.
    I may have had it in too much fat to start.

    Well, hard to tell from the pics but it looks like one probe is more towards the middle, and the other more towards the edge. If they are roughly in the same spot, then I’d be inclinined to say the Traeger probe is the wrong on (or at least less likely to be believed). But, you can’t know for certain till you get a third probe to figure out which of the two to believe, or which is the closer.
