My wife and I have a brand new baby so I only had about 15 minutes to prep this bad boy. Sautéed lots of fresh ginger and garlic in chili crisp oil. Added the sauces seen in the photo to a blender along with fresh lime and orange juice. Blended that along with the ginger garlic paste in the vitamix on high until very smooth.
Dumped that over 5 pounds of pork butt I got at Whole Foods (say what you will about WF, but their meat selection and quality is great). I cut the pork into big chunks for more surface area. Topped with some sautéed onion. Into the oven covered at 275 for about 8 hours when I get home from work.
Bonus question: is sambal oelek the greatest condiment ever, and why is the answer yes?
