Ingredients and instructions for 6 Servings:

Base
2c Quinoa
1 3/4 water
Salt to taste

Instant pot for 4min + natural pressure release

“Mediterranean” Chicken
3lb chicken thighs
2tb yogurt
1 juice of a lemon
1tb red wine vinegar
1.5 tsp salt
1 tsp smoked paprika
2.5tb zatar seasoning

let the chicken marinate for a few hours and cooked in the air fryer – 400F for 18min(in batches)

Veggies
1 pint cherry tomatoes
4 garlic cloves
3 broccoli heads
1 red onion
1tb oregano
1tb basil
Salt and pepper
1 tb red wine vinagre
3tb olive oil

mixe all veggies and seasoning and cook in the air fryer – 400F for 10-12 min(in batches so the veggies don’t get soggy!)

I topped everything with a little bit of feta cheese
