I made 3 sets of stretch and fold after kneading with the KitchenAid, because the gluten network wasn’t strong enough.
Baked the pizza with a G3 Ferrari pizza oven, and the result is quite surprising, in a good way !
The crust rose very much in the oven, they look a bit like Napolitean to me. The crust was very crunchy and airy, it was very tasty !!
