~chicken skewers~
2 large chicken breasts, cut into bite sized pieces
1/4 cup olive oil
Juice from 1/2 lemon
2 cloves garlic, minced
2 tsp oregano
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
~tomato chickpea salad~
1/2 can chickpeas, drained
1 cup cherry tomatoes, halved
1 tbsp olive oil
1 tbsp white wine vinegar
Salt & pepper
~zucchini~
2 zucchini, sliced
1 tbsp olive oil
Salt & pepper
For serving:
4 cups cooked brown rice
Tzatziki
Hummus
Toasted pita

1. Combine chicken and marinade ingredients in a bowl and toss well. Marinate for 30 minutes.
2. Combine the chickpea salad ingredients in a bowl and set aside.
3. Sauté zucchini over medium heat, 3-4 minutes each side, or until golden brown.
4. Thread marinated chicken onto skewers. Place on a preheated grill and grill for 5 minutes each side (5-7 minutes total on a grill press), or until the internal temperature of the chicken reaches 165°F.
5. Assemble bowls with brown rice, tomato chickpea salad, sautéed zucchini, souvlaki chicken, tzatziki, hummus and toasted pita.
