Roasted Vegetables with Tzatziki

Ingredients:
1 cup carrots, sliced
1 bell pepper, chopped
1 small zucchini, sliced
1/2 head cauliflower, broken into florets
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
Salt and pepper, to taste
1/2 cup tzatziki sauce (store-bought or homemade)
Instructions:
Preheat oven to 400°F (200°C).
Toss the vegetables with olive oil, garlic powder, oregano, salt, and pepper.
Spread vegetables on a baking sheet in a single layer.
Roast for 20-25 minutes, tossing halfway through, until vegetables are tender and golden.
Serve the roasted vegetables with a side of tzatziki sauce for dipping.
