


Still new to this smoker thing (4 months) so I thought I would do a tester before Thanksgiving. Very pleased with how everything came out. Only issue was when I put the binder on (I used a maple butter mix) the bird was still cold and the butter solidified. I ended up throwing it on the smoker and let it warm up just a little then put on the rub. This will be the only way I do a bird for now on.

Did you cover it at all? What exactly did you do, I am doing half the bird on the smoker and half in the oven (per the wife) I would really like to know your exact process
