    As many times as it takes to get the right crust and not burn it.

    Over dead coals like in the photo: once.

    Over actual searing temp coals: 4 times. Once from indirect to over the coals, second flip to other side at a 90 degree angle, third back to first side at same angle, fourth back to second side at -90 degree angle.

    Lightly dust with S&P, grill 30 seconds each side. Flip till grill marks are seared in. Down the hatch

    The rule is: Just keep flipping.

    If you can be bothered, every 10 seconds. Usually every 20-30 I do.

    And use a goddam thermometer. Medium rare isn’t a “feeling” or a “colour”, it’s a temperature in the middle. Get a quick read thermometer people.

    You want the heat absolutely scorching to get the crust, so you gotta keep flipping to stop under the crust getting too hot and over cooking the steak.

    1 flip is nonsense. And people trying for the 90 degree turn “diamond” shape are also prioritising aesthetics over good cooking.

    Just. Keep. Flipping.
