69 calories total for a good-size bowl. It's basically horchata jello and it's delicious. I added some rice cakes on top for some texture.
Recipe:
Sprinkle 1 packet of Knox gelatin over 1/4 cup of almond milk and let it sit. Meanwhile, bring 3/4 cup of almond milk to a boil. Pour the hot almond milk over the gelatin mixture and whisk it together. Add in 1 tablespoon of granulated stevia (or any other sweetener, to taste), 1/2 tablespoon of ground cinnamon, a splash of vanilla extract, and a pinch of salt and whisk it all together. If you want, add a couple rice cakes on top; they'll absorb some of the liquid and get nice and chewy to add some texture. Let it sit in the fridge for a few hours until it's firm, then enjoy!
