Woke up feeling under the weather so soup it is! Had this simmering away throughout the day and will do us the next few days dinner.

I made the stock using the peels from 1kg potatoes, 3 large carrots, one large onion, garlic, and ginger.
Brought this to the boil, then reduced to a simmer along with a 1.2kg chicken.
Cook for around an hour until the chicken is cooked through.
Strip the meat, then toss the carcass back in and simmer for however long.
Strain.
Chop the veggies peeled from before and add them in to cook through, along with any herbs and spices you like (I used salt, pepper, sage, thyme, turmeric, and paprika.
When the veggies are cooked, add back in the chicken and serve.
