Crispy Gnocchi with Edamame Pesto 🍝🍅🌿

I was today years old when I found out that gnocchi can be cooked in the oven and that pesto can be made with edamame! Also using some fresh basil and cherry tomatoes from our home garden to create this quick and easy dish. Hope you enjoy!

Ingredients:
-2 packages of gnocchi
-1 cup of cherry tomatoes, halved
-1/4 cup of water
-olive oil
-salt and pepper to taste
-1/2 tsp red chili flakes (optional)

Edamame Pesto:
-2 cups of fresh basil
-1 cup of dry roasted edamame
-1/3 cup of olive oil
-1/4 cups of nutritional yeast
-4 whole cloves of garlic
-juice of half a lemon

Instructions:
-preheat the oven to 450F
-add gnocchi, tomatoes, olive oil, salt, pepper, and red chili flakes into a bowl; mix well and spread onto a baking sheet lined with parchment paper
-bake in oven for 20 minutes
-add pesto ingredients into a food processor and blend until smooth
-place a large pan on medium heat and add the pesto with a 1/4 cup of water; mix well and bring to a low simmer
-add in gnocchi and mix well
-enjoy!
