Dahl
1 1/2 cups red lentils with 3 cups water. Cook until soft
Fry 1 or 2 chopped onions – add to lentils as soon as soft. Also garlic (optional).
Mix 1 Tb ground coriander, 1 tsp cumin, 1 tsp turmeric, 1/4 tsp fenugreek with enough vinegar to make a paste. Lightly fry til fragrant.
Stir into lentils with 1 Tb tomato paste. Reheat.
Cauliflower rice lightly fried with garlic, ginger, cumin seeds and 1/2 tsp chicken powder.
Basmati rice – can omit.
Microwave poppadom.
