Hey everyone, can anyone identify what fish this sashimi is? It had a very rubbery texture. Thanks in advance!

    Hokkigai. They’re clams and yes they’re chewy.

    As others have said, surf clam. It’s actually the single only piece of sashimi I’ve never really got on with. Can’t get over that chew. I usually ask for something else if it’s included in a sashimi platter. Did you like it?

    To add to everyone’s identification… 

    It’s cooked..at sea and is usually just thaw, clean out the innards, rinse and serve.
