    Ahh, ye old hockey puck. I have made that more than once. I recommend doing a hybrid of yeast and sourdough starter. Yeast for rise and sourdough for flavor. Ken Forkish has a great book on it.

    I think everyone has had an epic bread fail at least one time in one’s life. Mine looked like a flying saucer from a 60s Japanese sci fi movie.

    Yeah, the temperature of your oven is lying to you. Get a thermometer. My last oven was 15°, cold I’m guessing yours is closer to 20°

    Looks like you let the bread machine do the cook. I let it go till the final proof then do it in a separate bowel.

    Is it a very new / fresh starter and you added no yeast?

    I go for lazy sourdoughs and don’t use a bread machine, lazy methods are low kneeding an just take a while but seem to work pretty well. Also i don’t always do the stretch and folds but seems to come out well this is the recipe i use

    You need to bake this on a lower temperature 150°C. And 75 minutes.

    🤔 Let it rise for a longer time.
