I was craving parmigiana and freestyled a low calorie high protein version. This is meant to be more an inspiration regarding preparation than a strict recipe.
I brushed the eggplants with olive oil and baked them in the oven instead of frying them. I also substituted mozzarella with a high protein one. I used a lot of garlic and fresh basil to cook the tomato sauce.
The whole casserole has 570kcal and 47g protein. I only finished half of it. Yeah it's not the exact same as eating out this beast of a dish but for 285kcal per portion it tasted ridiculously good!
