Tomato Egg
Ingredients
* 4 eggs
* Salt to taste
* Neutral oil
* 2 scallions(sliced)
* 3-4 tomatoes(cut into chunks)
* 2 tbsp water
* 1 tsp soy sauce
* 2 tsp oyster sauce
* 2 tsp sugar
* 2 tbsp ketchup
* 1/4 tsp white pepper
* 1/4 tsp msg
* 1 tsp sesame oil
Instructions
1. Prep ingredients by slicing scallions and cutting tomatoes into chunks.
2. Whisk eggs and season with a pinch of salt.
3. Heat 3 tbsp of oil in a wok on medium high heat. Pour eggs and scramble and once the eggs are set but are still slightly runny, set it aside(30-45 seconds).
4. Add 2 tbsp oil to the same wok and sauté the white portion of scallions(30 seconds).
5. Once fragrant, add the tomatoes and a splash of water.
6. Let that simmer and once the tomatoes become soft and release their juices, add soy sauce, oyster sauce, sugar, ketchup, white pepper, and msg.
7. Let that simmer and once thickened, incorporate the scrambled eggs.
8. Finish with a little sesame oil and garnish with the green portion of scallions.

  1. My mum used to make this with diced onion instead of scallions and fry them with tomato first until they got a little brown to the relish before adding the egg and letting it cook. Maaaan one of my favourites

  3. In Indonesia it called telur orak-arik. Recipe almost same, but in food vendor on my neighborhood they use 1 egg with lot of vegetables (to cut budget).

  4. In my country, we just fry eggs with onions and tomatoes and a bit of salt and eat it with a local staple food called ugali (maize flour in hot water, cooked while mixing until it's solid.)

  5. There’s a middle eastern version of this called Shakshuka, but the egg is just cracked straight into the tomato. You dip bread and spoons straight into the pan and eat it that way. It’s delicious

  6. What about no sugar??? Will it make a huge difference? I just don't like the thought of "sweet eggs" BUT if that's the dish then it is what it is right!?! I hate tomatoes and allergic to eggs and I'm STILL bouta try this!🤪🙌😂😂😂

  8. it’s so funny that you say “if you like eggs with ketchup” bc i hate eggs w ketchup but i LOVE this dish lmao… i never add the extra ketchup to mine tho (never considered adding white pepper to it 👀)
