Mediterranean Couscous Salad 🥗

Ingredients:
Israeli couscous – 1.5 cups, uncooked
English cucumber – 1.5 cups, quartered lengthwise and sliced thin (about 1/2 cucumber)
Cherry tomatoes – 1 cup, halved
Red onion – 1 cup, quartered and thinly sliced (about 1/4 medium onion)
Kalamata olives – 1/2 cup, halved and drained
Fresh dill – 1 tbsp, finely chopped
Garlic – 2 cloves, minced
Extra virgin olive oil – 3 tbsp
Lemon juice – 2 tbsp (about 1 lemon)
Red wine vinegar – 2 tbsp
Dried oregano – 1/2 tsp
Kosher salt – 1 tsp, or more to taste
Black pepper – 1/2 tsp, freshly cracked
Feta cheese – 6 ounces, crumbled
