













So onto the meat.. Morrisons definitely gave a good amount of meat for the money. £6 for beef shin. Lots of taste and when cooked for hours, and alot more hours, it's a meal that fills a belly.
Quick note I'm cooking for my mum who has cancer and is needs to eat meals that are full of rich tasty goodness, in the smallest possible mouthful.
I purchased the 'wonky' carrots, peppers and onions. Gave them a peel and chop. The mushrooms I will admit are a mix of button mushrooms and a punnet of shitake.. I love mushrooms and mum does too.
Chopped the leek and the rest of the veg.
Into the pan went a 1 tablespoon (ish) of salted butter, a little veg oil and then all the onions. Then I left it alone for about 30 minutes on low. Carrots went in and another 30 minutes.
While that was happening I cut the meat and gave it a healthy dose of dried rosemary (1/4 teaspoon), some dried thyme (1/4 teaspoon) and a little oil. Mixed it all up and waiting to get seared.
Once the veg is mostly done throw in the garlic. I put the reduced priced cherry tomatoes into a bowl ready. Once the garlic is fragrant put all the veg into the bowl on top of the tomatoes.
Now that the pan was empty and the beef was ready, sear it in batches. I didn't cook it through, just made sure it had a nice dark browning. At this point it was very tough! I could have thrown it at a wall and it would punch me in the face.
Once the meat is seared in went the mushrooms.. With a few tablespoons of the oil from the beef bone stock. Gave it about 20 minutes storing occasionally while watching a film.
Then all the meat and veg went into the slow cooker, deglazed the cooking pan with more water.
I did get a buckle and had a bottle of wine. Personally I don't like wine to drink but mum does like a small glass once a week. So in went half a bottle 😂
Then I just left it alone on low and it's been cooking for 21 hours at this point and tastes great.
