    I’m making pasta alla gricia tomorrow. I got some good Italian spaghetti, pecorino Romano, and guanciale last weekend. The spaghetti was made in Italy using brass die and slowly dried. I’ve used buccatini from the same company and it’s the best pasta I’ve ever bought. I’ve never made pasta alla gricia, but I’ve made carbonara and amatriciana a few times.
