I work as the main butcher for a small family run retail store.
Been open for 3months now.
Yesterday I sold out of 6 different products after spending the last 1 weeks removing items and limiting our purchase orders due to spoilage.
Neither of the owners have any retail knowledge so I know tomorrow I'm going to get grilled on why we are out of so much.
I sold more product in the first 2hrs we were open yesterday than the entire last week lol.

For lack of product i will give you compliments for presentation.
Only detraction is the chuckroast tray doesnt have enough diapers to suck up the tray juice.
Is it a tourist town? Where things fluctuate heavily? What sold well this week to be out of stock?
I’m vegetarian but I love the smell of the butchers. My partner loves steak but hates the smell. What’s all that about?
I like seeing small cases it makes me feel like the store sells a shit ton and what I’m getting is the freshest possible. We all know and have seen what a bad display looks like and this isn’t even close lol. Good job man keep rocking it hope you get a pay bump soon

Most pictures of the retail case/display.
Hit me with your ideas so I can make it better.
Sounds like a great gig. High quality, no crazy high volume, building the department with logic and not desperation. Display looks nice if not just a tad empty. I was a bakery manager in my last job in a similar environment. Our butchers kept things tight and fluffed and cleaned as much as possible but sometimes we would just get absolutely mobbed. We couldn’t make sense of it because it had no pattern. I would bake like 100 boxes of cookies and a couple dozen croissants and come in the next day to empty tables. Restock them and then have to shrink them out two days later because they barely moved. It’s frustrating but sometimes it happens in certain areas.
But people can’t afford eggs or gas…
