    First attempt, It’s easier than it looks! 2 large onions instead of 3 medium. I substituted Rice Vinegar for the sherry after some research online and used vegan mozzarella cheese shreds in place of the Gruyère (because I’m lactose intoleramt and generally unprepared). I also thought I hadn’t caramelized enough onions but it was just enough. Used frozen puff pastry instead of the pie crust because it was more convenient.

    Family enjoyed it. Going to make 2 more for Thanksgiving with a better cheese and the Dijon mustard

    I never would have thought to do an onion based tarte tatin. That’s just sexy. And tasty.
