Crispy Gnocchi Sausage and Broccoli
Nutrition (Approximate): 1 Serving
Calories: 450 | Protein: 20g | Carbs: 35g | Fat: 25g

4 servings
1 (12- to 18-ounce) package shelf-stable potato gnocchi
1 large head broccoli (about 1-1.5 pounds), florets cut into 1½- to 2-inch pieces, stems thinly sliced
¼ cup extra-virgin olive oil
2-3 garlic cloves, roughly chopped
1 pound hot or sweet Italian sausage, casings removed, pinch into 1-2 inch pieces
1/3 cup grated Parmesan, plus more for serving
½ lemon, juiced (about 1.5-2 tbsp)
Salt, as much as you like
Crushed red pepper (optional)

Heat the oven to 425 degrees. Line a large sheet pan with parchment for easy clean up.
On a sheet pan, add the broccoli, sausage, gnocchi and garlic. Drizzle with olive oil, add salt and red pepper flakes. Toss everything, ensuring to coat everything.
Spread into an even layer. Roast until the sausage and broccoli are golden and crisp, 25 to 30 minutes. I like to mix it a few times while baking.
Once it’s out of the oven, squeeze the lemon half over the top and sprinkle with the Parmesan. Stir until the cheese has melted. Serve topped with more Parmesan and crushed red pepper as you like.

  1. I’ll have to try this version. Looks yummy. I do a version with roasted veggies of all sorts, zucchini, mushrooms, onions, broccoli, peppers, garlic and a spicy sausage. I have mixed it with pasta and topped with Parmesan. One of my favorite meals.
