Touch over 2" thick 20oz prime strip slab. I did a 24-hour dry brine with Pink Himalayan salt and reverse seared at 250(f) for an hour to 118 internal. Cooled after the bake and followed with an extra hot sear in cast iron for a minute each side flipping every 30 seconds. Served with homemade tangy garlic steak sauce.
