Mild Tacoing. Could be multiple reasons but as you just up potted I wouldn’t worry about it on one leaf. Give it a drink and if it starts happening to other leaves the first thing to consider is heat stress.

Brother… relax. Leaf curl is very, very common with peppers and rarely detrimental to your plant’s health. Especially if it’s just on one leaf. Your plants look absolutely amazing otherwise.
The most common causes of leaf curl are increased light/sun exposure or over/under watering. Given that all other leaves on the plant look extremely healthy, just keep doing whatever you’re doing – no need to change anything drastically.
A quick word of advice from one gardener to another – no need to be super helicopter-y with your plants. No plant will ever be completely blemish-free. Plants are EXTREMELY hardy mf’ers. Unless your plant is on the verge of death, don’t sweat it. Just provide what it needs – sunlight, water, nutrients, and ample substrate space, and it will do the rest.
