It’s summer (over 28°C), so I mix the sourdough starter, water, and flour and let it rest for 40 minutes. Then, I add the salt and incorporate it well, letting the dough rest for 10 minutes. I knead it in a stand mixer for about 7 minutes at medium-high speed (2.5 out of 3). After that, I perform 4 sets of coil folds every 30 minutes. I allow the dough to rise no more than 25%. Then, I pre-shape it and let it rest for 20 minutes. I shape it and, this time, left it in the fridge for 21 hours. I preheated the oven to 250°C and baked it for 20 minutes, then lowered the temperature to 215°C and baked for another 20 minutes.
