First attempt was beginning of March 2024, got discouraged and didn’t try again until April. Just kept trying and I’m finally at a place where I don’t feel so restricted by rules / times etc and feel comfortable to “get a loaf started” when I want bread. I wanted to share my first and my latest, any feedback or tips? I’d like to try more inclusions!

Recipe –
500g AP or Bread Flour
11g salt
395g water
100g starter

    Autolyse 30-40 min
    Add starter
    Dimple in salt

    3 sets stretch and fold
    Couple of coil folds

    500F lid on 25 min
    450 lid off 23 min
