I found a really good recipe for spaghetti squash that I tried this weekend. It’s vegetarian and less than 211 calories per serving. The only modifications I made was adding a package of Impossible Beef to it, as well as including the full 540ml can of chickpeas, bringing the total calories to 317 calories per 288g serving. Without the Impossible Beef and additional chickpeas, the recipe is less than 210 calories per serving.

The (modified) recipe is nice and filling thanks to the vegan beef and the high fibre chickpeas. The only thing I’d do different next time is maybe use 1/2 cup of parmesan instead of 1/3 cup, and I’d fry the mushrooms more to turn them into “mushroom bacon” so that they’ll add even more flavour to the recipe. I’d also skip the parsley since my family and I aren’t a fan of it.

If you like the idea of adding an additional protein to it besides the chickpeas (and you don’t want to use Impossible Beef), Yves veggie ground round or lentils provide even more fibre and are both lower calorie than Impossible Beef, so they’d make the dish that much more filling.
