Mommom’s Wedding Soup Recipe:
3 quarts of chicken broth
1 cup cooked chicken cut up
16 ounces of orzo pasta
1 1/2 lb of small meatballs
16 oz package of frozen spinach
Make chicken broth following the recipe in Episode 4: Chicken and Dumplings by using some of the chicken and adding it to the broth after cleaning and cooking it.
While chicken broth is cooking make meatballs following the meatball recipe from Episode 2: Meatballs. Be sure to make them small enough to be eaten on a soup spoon (about 1/2 – 3/4 inch)
Bake meatballs for about 15-20 minutes and drain well. Precook the orzo al denote and rinse with cool water.
Now that all the above ingredients are cooked put together in a 6 quart stew pot.
After all the above ingredients have simmered together for about 20 minutes add spinach and simmer for another 20 minutes.
Meatball Recipe:
1 1/2 lbs of ground pork and beef
1 egg
1/2 cup bread crumbs
2 tbsp grated cheese (heaping)
2 tsp parsley
1 tsp salt
2 tsp pepper
1-2 gloves of garlic crushed
Mix all above ingredients together until blended well. Roll into 1/2-3/4 inch balls.
Place in baking dish and sprinkle with olive oil, additional salt and pepper, and place 2-3 cloves garlic in the pan while cooking.
Bake 1 hour at 350 turning occasionally.
When thoroughly cooked drain and place in prepared sauce.
Chicken Broth Recipe:
1 whole chicken (cut up)
2 celery stalks
1 large onion
1-2 bouillon cubes
Salt to taste (about 1 teaspoon)
Put all ingredients in 1 large stock pot except bouillon cubes (they go in when water starts to boil) and cover with water, about 2 inches or more. Then bring to boil, add bouillon cubes. Cook for about 1 – 1 1/2 hours depending on the size of the breast as that is usually the largest of the pieces. When completely cooked strain broth and remove onion and celery and dispose. Let chicken cool so the meat can be removed. Discard bones and skin and put meat into broth. If the broth seems too strong you can add some water. The broth is now ready for dumplings or noodles.
