I think I still have some tweaking to do with this recipe, but it’s starting to come together

350 for 35 min

2 cups of cottage cheese (note to reduce to 1.5 cup next time)

1 egg

1/2 cup of flour

1/4 cup of sugar

1/4 teaspoon of salt

1/2 teaspoon of baking soda

1 tsp rum extract

1/2 cup pumpkin puree

To taste- cinnamon, nutmeg, jello sugar free cheesecake powder

Sprinkle powdered sugar on top

1/8 is 129 cal, 17 carb, 2.4 fat, 9.2 protein

Suggestions to adapt recipe welcome- the texture came out more like pie than cake (a bit wet)
