Only thing I did different was I did 2 rounds of stretch and folds and then 2 rounds of coil folds. And then when shaping, I let them rest for 15 mins then shaped again. Also, i did open bake method because I don't have a Dutch oven or roasting pan, although I'm going to invest in a couple roasting pans since seeing the results. I was misting the loaves every few mins, I also has a sheet pan of boiling water on the bottom&&an upside down sheetpan above the loaves.
I'm going to look into getting a roasting pan or Dutch oven. But until then, any tips to make more steam please? 🙏 Greatly appreciated, for sure!!
Also, I toasted a piece&&quickly whipped together avocado&lemon,..OHMYGOSH it was HEAVENLY!!! with some everything seasoning on my avocado sourdough toast,..perfectionnn!! 😍
I'm going to start some more loaves in a day or 2&&experiment some more! I saw someone make an expresso double chocolate chocolate chip loaf, gonna try that 😉
