Blows my pellet grill away by a mile. Can taste the pecan.
Dry brined it. tried two different rubs to compare them and test for thanksgiving. Left is homemade, right is maple bourbon.
Tip I figured out – don’t put the wood chunk on basket directly as it burns up hot, instead put it above it on grate with one lit piece of charcoal and it will smoke off nicely.

I only own a kettle and have been told I’m missing out without a pellet smoker. I’ve never felt I’m suffering tho and like being actively involved with the fire tending. Tell me what’s better working with a kettle over pellet so I have some ammo against the haters.
