My mom taught me how to make these 50 years ago. Easy, quick, flexible, satisfying. Add sides of couscous & a vegetable and you can have a complete dinner for four in a jiffy.

    I know by “Recover” she means “re-cover the meatballs” but I prefer to think she really means “Have a seat and a glass of wine to recover from your arduous labour”.

    #Cheese Stuffed Meatballs
    1 can (10¾ oz.) tomato soup, 8 oz. tomato sauce, **or** pizza sauce*
    1½ lbs. ground meat**
    ⅔ c. Italian seasoned bread crumbs
    ⅔ c. chopped onion
    1 egg
    ¼ t. salt***
    4 oz. mozzarella cheese, cut into 6 cubes (Can use cheddar or Swiss cheese too.)****

    Mix thoroughly ½ c. soup/sauce, meat, breadcrumbs, onion, egg, and salt; divide into six parts.**** Shape firmly around each cheese cube to form 6 balls.**** Arrange balls to form a circle in 10-inch glass pie plate. Cover with plastic wrap.

    Microwave on HIGH 6 to 8 minutes, turning dish once. Drain. Pour remaining soup over meatballs. Recover.

    Microwave on HIGH 3 to 4 minutes**** or until done. Let stand 2 minutes. Makes 6 servings.

    * I use the pizza sauce.

    ** I use turkey.

    *** I don’t add the salt.

    **** I use less mozzarella cheese and cut it into 4 cubes; likewise, I divide the meat mixture into 4 parts.

    Ok, you had me for a bit and I could see this being good, but then I got down to the cooking method.

    Do you still microwave the meatballs?
