New York strip from the local grocery store. An hour in the oven at 250 salt and pepper only. Pulled and seared with Rosemary, unsalted butter and smashed garlic in a cast iron. I aim to get the fat rendered to get those striated patterns. I find that this cook hit the mark. Happy festivities to everyone. I'm drunk and I love you
