Make ahead Mediterranean Salad

What you NEED:
2 cans chickpeas, drained and rinsed
1 punnet cherry tomatoes, halved
1 small red onion, diced
1 cucumber, diced
1 bunch parsley, chopped
1 block Greek feta, crumbled
For the dressing:
1/4 cup olive oil
2 tablespoons balsamic vinegar
Juice of 1 lemon
1 teaspoon Dijon mustard
Pinch of salt
Pinch of pepper
What you DO:
1. Grab a big mixing bowl and toss in the chickpeas, cherry tomatoes, red onion, cucumber, parsley, and feta.
