I used to have a FoH manager who’d bring me a coffee to the walk in when I did the open checks at 7am, she’d come to the pass as we’re getting battered on a Friday evening with a tray of hot and cold drinks, remembering what most of the guys wanted.
Her food went straight to the top of the wait list, she wants to replace her side salad with another steak, that’s fine, she wants to go off menu, let me chef you something up.
