There’s a place in Eltingville offering something you don’t see every day: robatayaki-style cooking. At Roppongi Robata & Sushi, Chef Jack Dong prepares food while kneeling in front of an open grill, using a traditional Japanese method rarely seen in the U.S.

The setup is simple but striking. Guests sit at a 17-seat counter while Chef Jack grills marinated skewers of vegetables and meats over open flames. Each dish is cooked with minimal seasoning, staying true to home-style Japanese flavors. Once finished, the chef announces the dish in Japanese and serves it on a wooden paddle.
