Enjoyed sashimi salmon from a restaurant, can’t find anything similar to this in grocery stores, so buttery! Is this a particular part of salmon or did someone feed their fish wagyu leftovers.

Okay. It’s farmed Atlantic salmon.
You’re not far off with the wagyu leftover joke—these fish (and particularly this fish) are feed a high fat diet generally based on fish meal. Fish don’t have a lot of room to move so the fat accumulates rather than being used for energy. Different “farms” will produce different qualities of fish. Chances are the one this came from one targeting the sushi/sashimi market.
The only way to get the high quality and properly processed fish is to buy from a specialty retail/wholesale outfit. There’s usually one or two in most large cities, but it will take some investigation to find a good one.
Finally as to the colour. Farm fish can be almost any colour you want. Colour is added to the food and while you normally you get that perfect salmon orange, there’s literally colour swatches and the producer can choose from a wide range of shades. That fish looks a little on the pale side but I assure you it’s deliberate.

Looks really fatty, farmed salmon. Closer to the belly the fattier it is. This doesn’t look like belly but it looks like the meat close to it. Perhaps you could try that
