Three squashes and over twenty spices went into this dish and it just takes around 45 minutes to make.

You can use any combination of squashes that can be cooked with the skin on. So any combination of these three but also kabocha, acorn, and delicata.

The spice combinations come from just two mixes. Garam masala from South Asia and Ras El Hanout from North Africa. Together, they create an immensely fragrant squash dish that requires very little else, but can easily be made even more decadent with a spiced salted maple syrup.

It keeps warm very well, so you can make this earlier on and have it ready for your Thanksgiving dinner.
